What Is Fish A La Diabla (Pescado A La Diabla)?

Let’s dive straight into it! Pescado a la Diabla, or fish a la Diabla, is Mexican Deviled fish. The fish is cooked in a tasty sauce you are sure to love!

There is plenty of flavor and spice in the sauce, making it a wonderful accompaniment to a wide range of fish, or even spread over fries!

Typically, seabass, tuna, wahoo, mackerel, grouper, red snapper, Mahi Mahi, and marlin are used in this dish.

These are fish typically eaten in Mexico and are the best ones to use to give that authentic taste! However, any sturdy white fish will work, so you can add the fish that you like most to the dish!

The red-colored sauce might look a little odd when paired with fish, but trust us, it is delicious!

It is often served with white rice and some greens (like beans), although you can add any vegetables you want.

Broccoli or peas tend to work well, or even some wilted spinach or charred kale would work well with the sauce.

Not only is the dish full of flavor and spice, but it is also super quick to make!

You can make fish a la Diabla in less than thirty minutes, making it a brilliant recipe to cook after a long day at work.

The ingredients are fairly easy to get hold of too, although you might struggle locating some of the chilis.

It might be worth visiting an authentic grocery store or spice shop to locate them if you don’t live near or in Mexico.

Of course, you can use dried chillies and other spices if you wish, but it does take some of the authenticity away from the dish.

Pescado A La Diabla - What Is Fish A La Diabla? (All You Need to Know)

Let’s start with what you need. Below we have an ingredients list and quantities to make Pescado a la Diabla for four people.

  • 4 filets tilapia (or other white fish)
  • 4 guajillo peppers
  • 4 cups of water
  • 3 chile de arbol peppers
  • 1 chipotle pepper
  • ½ onion divided
  • 1 garlic clove
  • 3 tomatoes quartered
  • 1 ½ tbsp of salt
  • 1 tbsp olive oil

We know this recipe has a good amount of chili in it! If you want to make it even spicier, we recommend doubling the chipotle pepper quantity.

You could also add another chile de arbol if you wanted. This will give the sauce an extra kick and is sure to get your tongue tingling!

Alternatively, if you want the sauce to be milder, you can add a tablespoon of ketchup.

This won’t impact the texture or consistency of the sauce, but it will add some sweetness to the dish. It also helps to cancel out some of the spice, making it milder.

You can also add another tomato if you want. Make sure that your tomatoes are sweet, though, as you don’t want to have a bitter sauce.

If your tomatoes are a little sharp, add a teaspoon of sugar to the sauce a few minutes before serving.

This will help to balance the sharp tomatoes and add some sweetness to the sauce. Be careful not to add too much, though, as you don’t want the sauce to be too sweet!

Now that you have your ingredients, let’s get cooking! Use our step-by-step recipe to make Pescado a la Diabla now!

  1. Remove the stems from your chilies (except chipotle) and cut them lengthwise, removing seeds and veins as you go.
  2. Next, place the chilies in a stock pot with your water. Bring this to a boil.
  3. Once boiling, remove the heat and leave the chilies to sit in the water for five minutes or so. They should become pliable at this point.
  4. Remove the water and add your chilies to a blender.
  5. Add your chipotle chili, garlic, ¼ onion, tomatoes, and a tablespoon of salt to the blender. Blend the mixture until smooth.
  6. Taste the mixture. Add more salt if needed. Here you can adjust it to your liking.
  7. Strain the mixture once you have adjusted the taste.
  8. Set the sauce aside for later.
  9. Dice your remaining onion.
  10. Wash your fish and pat it dry. Season it with the rest of your salt and pepper. Again, you can adjust the seasoning to suit you.
  11. Add your oil to a skillet and heat it.
  12. Once heated, add your onion and saute until transparent. This should take around a minute.
  13. Next, add the blended Diabla sauce and cook for another minute.
  14. Add your fish to the sauce.
  15. Cook for another four to five minutes. You might need to cook it for a little longer depending on how thick your fish is.

Once cooked you can serve it immediately with white rice or fries, and some vegetables. Serve with whatever you like and enjoy!
